Location : Languedoc - Roussillon, Gers, Loire
Grape variety : Chardonnay
Vinification
After sorting, the grapes are pressed slowly and gently. Low-temperature fermentation in stainless steel vats. The use of such techniques allows the true aromatic potential of the Chardonnay grape to come through, whilst also increasing it fat and supple flavour and texture.
Ageing
Kept at a relatively low temperature in thermo-regulated vats.
Colour
Appearance : A highly luminescent, pale yellow with subtle golden highlights.
Nose
Nose : Intense and reminiscent of white blossom and citrus.
Palate
Palate : A clean initial impact with a good degress of acidity that is not overly pervasive. A very fresh wine with great balance between alcohol and acidity. A pleasant impression of sweetness associated with its aromas and with a marked presence of fat.
Wines & Food Pairing
Food recommendations : A Chardonnay that would be enjoyable simply as an aperitif, but which would also complement many fish and seafood dishes. Certain cow's milk cheeses, such as Tomme, would also go well with it.
Best served around 13° - 15° C / 55° - 59° F.
