Vinification

Plot selection to obtain the best grapes. Temperature-controlled fermentation to preserve fruitiness. Maceration lasting at least twenty days with gentle extraction from the skins to preserve the finesse of tannins and aromas.

Ageing

In thermo-regulated stainless steel vats to bring out the best of this wine's aromatic potential.

Colour

Appearance : Peony-red colour with a subtle bluish-purple tinge.

Nose

Nose : A complex nose of excellent intensity, reminiscent of spices and small back berry fruit, accompanied by hints of torrefaction.

Palate

Palate : Mouth-filling, clean attack with silky tannins and the same suggestions of very ripe black berry fruit. The structure of this wine gives it good aromatic length. Wonderful balance.

Wines & Food Pairing

Food recommendations : This Cabernet-Sauvignon would pair well with red meat. It would also do great justice to dishes cooked with sauces, such as Beef Burgundy or beef stew. Best served around 17° - 18° C / 63° - 64° F. For drinking in two to thress years'time.
