Grape varieties - Grenache (70%), Syrah (20%) and Mourvèdre (10%)
Selected from parcels planted in the rocky, limestone "garrigue" scrublands and lower slopes of the Dentelles de Montmirail hills
Vinification
Bunches destemmed and each varietal vinified separately
Blending following malolactic fermentation
Transfer to barrels in the spring following the harvest
Ageing
20% barrel-matured prior to maturation in unlabelled bottles
Colour
Deep ruby colour with glistening highlights
Nose
Highly aromatic and complex with characteristic notes of kirsch and undergrowth
Palate
A wine characteristic from its appellation - full-bodied and robust, but relatively fat
It has a silky, aromatic finish
Wines & Food Pairing
Serve at 16°-17°C (61°-63°F)
The ideal accompaniment to red and white meat as a young wine, and game, meat served in sauce and ripe cheese when a little older
