Vinification

Chilly racking of the must after pressing in pneumatic wine press Vinification at low temperatures in thermo-regulated tanks Fermentation for 15 days to 3 weeks Barreling after fermentation and stirring of the lees

Ageing

Maturation in tanks over fine lees and in french oak barrels during 8 months (Not any new barrels in order to preserve the freshness of Sauvignon grape variety)

Colour

Pale yellow colour with green hints

Nose

Passion fruit and peach associated to floral scents such as acacia Delicate vanilla exhalations strengthen the bouquet

Palate

The frank attack is melted in a full rich and round mouth, brought out by the maturation in wooden The final is mineral

Wines & Food Pairing

Will match with salmon pastry and others fishes in sauce as for instance a sole, a pike or crayfishes in 'court-bouillon' Serve at 12° C (54° F)
