Vinification

Cold racking of the must after pressing in pneumatic press Vinification at low temperatures in thermo-regulated vats Fermentation during 15 days to 3 weeks Barreling after fermentation and after stirring the lees

Ageing

Maturation in vats on fine lees and in french oak barrels (not in new oak barrels to preserve the freshness of the grape variety) for a duration of 8 months

Colour

Pale yellow colour with green hints

Nose

Citrus notes like grapefruit but also like white flowers with a butter taste due to the maturation in oak barrels

Palate

The palate is in roundness, voluminous and persistent, emembering aromas from the bouquet

Wines & Food Pairing

Serve at 12° C Will match with fishes like smoked salmon, shellfish, 'foie gras' and at the aperitif Potential for ageing from 3 to 5 years
