Terroir
Southern Rhône Valley own-appellation wine (cru)
Grape varieties: Grenache (70%), Syrah (20%) and Mourvèdre (10%)
Selected from parcels planted in the rocky, limestone "garrigue" scrublands and lower slopes of the 'Dentelles de Montmirail' hills
Vinification
From destemmed bunches, grape varieties are vinified separately
Then blending following malolactic fermentation
And transfered into barrels in the spring following the harvest
Ageing
20% barrel-matured prior to maturation in unlabelled bottles
Colour
Deep ruby colour with glistening highlights
Nose
Highly aromatic and complex with characteristic notes of kirsch and undergrowth
Palate
A wine characteristic of its appellation full-bodied and robust, but relatively fat
It has a silky, aromatic finish
Wines & Food Pairing
Serve at 16°-17° C (61°-63° F)
Young, it will an ideal accompaniment to red and white meat
Aged with game, meat cooked in sauce and ripe cheese
