Manual harvest Half the wine is vinified in one or two-year-old barrels, the other half in new barrels

Ageing

On fine lees with stirring Assembly in March and bottling before July

Colour

Shiny straw coloured robe

Nose

Citrus, vanilla and hazelnut aromas that then move on to toast

Palate

Between power and finesse, in the mouth this wine is balanced, slightly exotic for the younger wines and beautifully oaked. The palate evolves towards patisserie flavours

Wines & Food Pairing

Serve from 12 to 14°C This wine goes really well with shellfish in sauce, fish cooked with cream and rabbit fricassee
