BOURGOGNE CHARDONNAY Cuvée Prestige 2006 - Emile Chandesais
Terroir
Côte Chalonnaise
Grape variety : Chardonnay
Marl or clay soil with limestone predominant
Vinification
Manual harvest
Vinification in stainless steel vats and in oak barrel, 1/5 of which are new
Ageing
At the end of spring when malo-lactic fermentation is finished, the cellar master creates a blend to get the oaked feel we're looking for
All the wine is then placed in stainless steel vats where it is fined before bottling in September
Colour
Tender yellow with hints of lime-tree blossom
Nose
Lightly oaked but the fruit predominates
Palate
The perfect balance for this wine which is endowed with both fattiness and tonus
The Chardonnay expresses itself of course, with grapefruit notes mingling with a touch of mineral
Wines & Food Pairing
This wine goes very well with shellfish and fish 'en papillote'
A platter of delicatessen meats or a blue cheese would also make great partners for it
