Manual harvest Vinification in stainless steel vats and in oak barrels, 1/5 of which are new

Ageing

At the end of spring when malo-lactic fermentation is finished, the cellar master creates a blend to get the oaked feel we’re looking for. All the wine is then placed in stainless steel vats where it is fined before bottling in September

Pleasant liveliness keeps this wine fresh and consolidates its structure. The budding dried fruit flavours foretell its upcoming maturity

Wines & Food Pairing

This wine goes very well with shellfish and fish ‘en papillote’ A platter of delicatessen meats or a blue cheese would also make great partners for it
